Ginger and Sesame Seed Logs

Ingredients

1 cup (100g) walnuts

1 cup (140g) macadamias

1 cup (90g) rolled oats

400 gram fresh medjool dates pitted

1 1/2 teaspoon ground ginger

1/2 teaspoon sea salt

1/2 cup (75g) sesame seeds

Description

Healthy snacking doesn't have to be boring! Try these tasty ginger and sesame seed logs - wholesome, good-for-you treats!

Directions

Process nuts and oats in a food processor until finely chopped.

Add dates, ginger and salt; process until mixture forms a paste.

Shape level tablespoons of mixture into 5cm long logs; place on a baking-paper-lined oven tray.

Refrigerate for 15 minutes.

Meanwhile, stir sesame seeds in a frying pan over medium heat for 2 minutes or until lightly toasted. Cool.

Roll logs in sesame seeds; place on a tray.

Refrigerate for 2 hours or until firm.

Notes

Medjool dates are available from the fresh food section of major supermarkets. Store logs in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
